Crisp Sesame Crackers
Eating most store-bought crackers is discouraged if you are trying to keep your blood sugar low. But this simple and delicious keto cracker is A-OK. It is tasty enough to eat on its own, but its also a great addition to a party charcuterie board as an accompaniment to cheese and pâté. And better yet, each cracker has less than 1 gram of carbs. Ingredients:
1 1/4 cup sesame seeds
1/2 cup sunflower seeds
1/2 cup shredded cheddar cheese
1 tbsp psyllium husk powder
1/2 cup water
2 eggs
1/4 tsp salt
Preheat the oven to 350F (175C)
Line a 13" x18" baking sheet with parchment paper. Combine all of the ingredients well in a mixing bowl, then spread evenly over the parchment paper.
Bake in the 350F oven for 20 minutes, then remove and carefully cut the crackers into squares. Reduce the oven temperature to 275F (135C) and return the crackers for another 30 minutes, or until they are golden in colour and no moist areas still exist. Turn off the oven, open the oven door, but do not remove the pan of crackers until the oven is cool. Makes 30 crackers.
